Two sides of Maule

  • Location: South of Curicó and north of Itata, Maule extends across Andean, central and coastal landscapes. It is too broad for one soil or temperature profile.
  • Old-vine drylands: The interior drylands preserve País and Carignan grown without irrigation, often as free-standing bush vines. Producers are giving these older vineyards renewed attention alongside international varieties.

Carignan, País and VIGNO

  • Carignan: Often combines vivid acidity, firm tannin and dark or sour-cherry fruit. Its structure can be more forceful than its colour or an old-vine label suggests.
  • País: An older part of Chile’s vineyard history, capable of fresh, lighter-coloured reds as well as other styles. Vine age alone does not determine quality, concentration or cellar method.
  • VIGNO: A producer collective established in 2011 to champion old, dry-farmed Carignan. Its shared charter gives a specific meaning to the name, beyond simply “old vines”.

At the table

  • Carignan: Serve with roast lamb, grilled pork or a slow-cooked beef ragù; savoury meat and sauce give the tannins a substantial match.
  • País: Pair a supple example with roast chicken, pork terrine or mushrooms; gentle tannins keep the match lighter than a full-bodied red.
  • Service: Supple reds: 14–16°C. Structured reds: 16–18°C; decant mature sedimented bottles gently just before service.
