Clàssic Penedès

  • Identity: The quality sparkling wines of Penedès DO, with grapes and wine from the delimited Penedès area.
  • Organic: Certified-organic grapes and wines are required.
  • Method: Traditional bottle fermentation is used; the specification also permits the ancestral method.
  • Ageing: Normally at least 15 months from tirage to disgorgement. Specially controlled ancestral wines aged at least four years may be sold undisgorged; this is separate from Cava Reserva.
  • Labels: Vintage and disgorgement date help distinguish harvest from the later removal of the lees.

Further: the ten Penedès zones

  • Highlands & slopes: Alts d’Ancosa, Costers del Montmell and Muntanyes d’Ordal.
  • Garraf: Marina del Garraf and Massís del Garraf distinguish coast from massif.
  • Central hills & valleys: Conca de Foix, Costers de l’Anoia, Costers del Lavernó, Turons de Vilafranca and Vall Bitlles-Anoia.
  • Use the distinction: Alts d’Ancosa is cooler; Marina del Garraf is strongly maritime. Massís del Garraf has limestone-rich terraced slopes, while Vall Bitlles-Anoia includes river terraces.
  • Reading aid: The groupings above organise revision; they are not additional legal tiers.
