Before service

Practical starting temperatures in °C

2 / 2
01

Light white and rosé

  • 7–10; full white: 10–13; light red: 10–13; medium to powerful red: 15–18.
  • These are starting points, adjusted to the wine and guest's preference.
02
  • An excessively cold white may seem inexpressive; an overly warm red loses freshness.
  • Measure and adjust gradually rather than relying on room temperature.

Before service, explain any wait

“I am chilling it briefly to serve it in better condition.” Do not try to warm wine against a very hot source.

Prepare equipment, then check the wine: identity, condition and temperature.
