Serving still wine

Confirm the order; set the glasses; present the label to the person ordering; announce the wine and wait for agreement before opening.

• For cork closures, cut the capsule below the lower lip, clean the neck, insert the worm without going through the cork and extract gently.
• Wipe the mouth.
• A screwcap opens without a corkscrew.

• Pour a small taste for the host, then wait for approval.
• Serve from the right where possible without touching the glass with the bottle; share evenly, wipe the mouth to control drips and finish with the host.

• For a new bottle, repeat presentation and checking.
• Offer a clean glass for tasting; do not automatically top up a glass if the guest does not want it.
