White grape

Assyrtiko

Saved references

A Greek white variety able to retain striking acidity at considerable ripeness. Dry wines can feel both forceful and taut; the grape also contributes to sweet wines, so neither origin nor variety alone establishes style.

Aromatic palette

lemon · citrus peel · yellow apple · wax · flinty impressions · hazelnut with development

What could you confuse it with?

Can resemble powerful Chablis or dry Chenin. Compare alcohol, palate weight and grip; a smoky or saline impression alone cannot locate the wine.

Origins & family

Origin

Greece, with its best-known historic expression on Santorini.

In the vineyard

A late-season, vigorous variety with useful tolerance of heat, drought and wind in its home conditions. Thick skins can contribute texture; such resilience does not eliminate climate risk.

Growing season

Late ripening with strong adaptation to heat, drought and wind in its home conditions.

Vineyard sensitivities

Grape moths can damage fruit; the reference observations do not identify exceptional fungal susceptibility.

Regional expressions

Greece

Santorini

Dry examples often combine restrained citrus with substantial weight and flinty or saline impressions.

Structure

High acidity can coexist with high alcohol and firm texture.

At the table

10–12°C with substantial seafood; let the glass warm slightly.

Cellar & service

Winemaking & development

Tank preserves a direct fruit-acid profile; lees and oak can build breadth. Skin contact raises phenolic grip, while dried-grape sweet wines create a very different concentration and aroma.

Service & ageing

10–12°C lets a substantial dry wine show both weight and acidity. Offer a wider glass for lees-aged or mature examples; sweet styles need separate service decisions.

Pairing logic

Try dry styles with grilled octopus, oily fish, lemon-roast chicken or salty cheeses. Select sweet styles for nut and dried-fruit desserts.
