Red grape

Pinot Noir

Also known as Pinot Nero · Blauer Spätburgunder · Blauer Burgunder · Modri Pinot · Spätburgunder

Saved references

A red variety capable of aromatic detail without deep colour. Red fruit, flowers and savoury development are useful reference points, but Pinot Noir can also be dark-fruited, tannic or powerful in particular sites and cellar styles.

Three clues to explore

01

Red-fruit detail

02

Usually restrained tannin

03

Pale colour need not mean low flavour

What could you confuse it with?

Gamay, Nebbiolo and lighter Grenache can overlap. Look at the acid-tannin relationship; fine texture or earthiness cannot identify a country.

Origins & family

Origin

Burgundy, France.

In the vineyard

Early development and sensitivity to heat, rot and other diseases demand careful site and canopy management. Berry shrivelling can occur rapidly when fruit becomes overripe.

Growing season

Early budbreak and ripening favour cool or temperate sites. Heat can accelerate sugar accumulation and shrivelling.

Vineyard sensitivities

Thin-skinned, compact fruit is vulnerable to grey rot; downy mildew is also important.

Site & soils

Clay-limestone is a classic Burgundian setting. Moderate fertility and limited vigour help retain definition; excessive heat can shorten ripening.

Regional expressions

France

Côte d’Or, Bourgogne

Red or dark fruit with site, vintage and élevage shaping perfume and savoury development.

Structure

Light-medium to full, with variable tannin; substantial wines can still be pale.

At the table

14–16°C; compare similar age and oak influence.

New Zealand

Central Otago

Ripe cherry and plum are common; warmer districts can produce more body and tannin.

Structure

Often medium-full, with freshness and ripe fruit intensity.

At the table

15–16°C; avoid assuming every New Zealand Pinot is light.

New Zealand

Wairarapa

Can show darker fruit and savoury notes, with sustained, fine tannins.

Structure

Medium body with a structured finish.

At the table

Give young wines time in the glass.

Willamette Valley

Cool-climate examples often combine red fruit, freshness and variable earthy or floral development.

Structure

Medium body; vintage and site create wide variation.

At the table

Compare to Burgundy at matched age and winemaking intensity.

Ontario

Often cherry-led, with savoury development or oak spice according to bottle and age.

Structure

Frequently light to medium-bodied; colour alone does not establish concentration.

At the table

Start around 14–16°C with poultry or mushrooms and adjust to the wine’s weight.

Traiguén, Malleco

Baettig’s documented examples combine red fruit and floral notes with fresh acidity.

Structure

Fine tannins can still be persistent; vintage and extraction change the weight.

At the table

Serve below warm room temperature and assess the wine in the glass before decanting.

Río Negro

Chacra Barda illustrates red plum and raspberry fruit with savoury detail.

Structure

The producer describes an open texture and gentle tannins; other estate bottlings are more structured.

At the table

Serve a fresh example lightly cool and let it open before deciding on a decanter.

Neuquén

Reserva Del Fin Del Mundo Pinot Noir provides a San Patricio del Chañar example with sour cherry, raspberry and a subtle smoky note.

Structure

Its producer describes silky tannins; Neuquén Pinot Noir can have appreciable fruit concentration.

At the table

Yarra Valley

Cool-site Pinot can combine red-fruit aromas with savoury detail; some fruit also goes into sparkling wine.

Structure

Usually lighter tannin than Cabernet; extraction, whole bunches and site change weight.

At the table

Pair according to the actual wine’s tannin and texture, rather than assuming every Pinot is delicate.

Mornington Peninsula

Maritime Pinot often emphasises fresh red fruit; Ten Minutes by Tractor Down the Hill 2024 is a multi-site regional example.

Structure

Fine tannin and acidity can accompany substantial flavour; estate does not automatically mean single-vineyard.

At the table

The producer suggests 13–16°C for this release, with duck or savoury dishes.

Tasmania

Still Pinot and traditional-method sparkling are two important uses of the grape in the cool island climate.

Structure

Natural acidity supports both fresh still wines and sparkling base wines; lees ageing adds a separate layer of texture.

At the table

Establish still versus sparkling before choosing glass, temperature and food.

Waitaki Valley

A cool eastern river-valley origin for fragrant, finely structured Pinot Noir.

Structure

Limestone slopes and river gravels provide different growing conditions; Waitaki is its own GI.

Valli Waitaki Vineyard Pinot Noir 2022 belongs to Waitaki despite the producer’s Central Otago base.

Cellar & service

Winemaking & development

Whole clusters, maceration length and extraction alter perfume and tannin. Oak adds its own spices; pale colour does not mean weak flavour. The variety also makes important sparkling base wines.

Service & ageing

14–16°C is a useful starting point, with a broad bowl for aroma. Decant youthful structured wines selectively and handle mature bottles gently.

Pairing logic

Duck, roast chicken, salmon, mushrooms and lighter game are flexible matches. Match the sauce and concentration, not only the protein.
